Raspberry, Mango and Coconut Slice

This is my go to recipe for a quick fix sweet treat! We all need a bit of indulgence and this is mine! Serve either as a dessert with a scoop of creamy coconut ice cream or just on it’s own with a steaming mug of my favourite Earl Grey Tea. I try and let the natural sugars create the wonderful caramelised finish here, with just a microscopic sprinkling of brown sugar to balance any tartness of the fruit.

  • 8 puff pastry sheets, cut into 3" x 5" rectangles – plus a few strips left for borders on all rectangles (From 1 roll of shop bought puff pastry)
  • 4 tsp of youngberry jam (Or chunky Raspberry jam is also lovely)
  • 1 punnet of fresh raspberries
  • 1 mango, sliced into small 1" piece wedges
  • 1 tbs brown sugar
  • 8 tsp coconut milk
  • 4 tsp salted butter
  • Heat the oven to 180 degrees centigrade.
  • First roll out the puff pastry from the ready roll – until it thins out slightly. Cut into 8 rectangles 3″ x 5″ and cut any remaining pastry into thin strips. Use these strips to create a border all around the rectangle as shown in the photo.
  • Place in a greaseproof lined baking tray and bake for 4 minutes in the oven.
  • Remove and spread over 1/2 tsp of youngberry jam over each of the pastry sheets.
  • Add 3–4 raspberries and at least 2 wedges of mango in each pastry sheet, fitting all the fruit in snugly within the pastry borders.
  • Sprinkle over a tiny bit of brown sugar over each fruit filled pastry sheet.
  • Drizzle over 1 tsp of coconut cream over each fruit filled pastry sheet and finally dot each pastry sheet with 1/2 tsp of butter each.
  • Now place back in the oven and bake for a further 12 minutes or until the pastry borders are golden and puffy and the fruit starting to golden and caramelize.
  • Slide your pastries off onto a cooling rack. I much prefer these served luke warm as it allows the bubbling fruit to settle beautifully into a medley of sweet, coconut caramelised filling. Absolutely divine served with a scoop of creamy coconut ice cream or just simply on their own!!
