Banana Bread

Every week, Taste Safari will aim to solve your kitchen conundrums! This one came in recently from Sophia in Nairobi, Kenya:
“I bought a bug bunch of bananas and didn’t eat them in time! What can I do with bananas that are past their prime? Please help me Taste Safari!”
Well there is only one thing that comes to mind with this conundrum – a scrumptious, classic, Banana Bread!
- 1 cup yoghurt mixed with one cup yoghurt (buttermilk)
- 1 cup brown sugar
- 3/4 cup melted butter
- 2 large eggs
- 1 and 1/2 cup mashed ripe bananas (tip: use a potato masher – works great!)
- 1 cups bran flour
- 1 cup plain flour
- 2 teaspoons baking powder
- 3/4 teaspoon ground cinnamon
- 1/2 tsp nutmeg
- 1/2 teaspoon Soda bicarbonate
- 1/2 teaspoon salt
- 3/4 cup flaked almonds
- Preheat oven to 180 degrees. Line a traditional loaf tin with butter and flour.
- Whisk buttermilk, brown sugar, melted butter and eggs in a large bowl.
- Stir in mashed bananas, both flours, baking powder, cinnamon, baking soda, salt and nutmeg in a medium bowl.
- Fold the dry ingredients into the wet ingredients and stir until just combined.
- Fold in the flaked almonds. Transfer the batter to the prepared loaf tin.

- Bake until the top is golden brown and a wooden skewer inserted in the centre comes out clean, 50 to 60 minutes.
- Gorgeous with a helping of vanilla bean ice cream. Oh yum!!
